Department of Coffee and Social Affairs has its very own roastery in East London, roasting unique single origin coffee for over four years, headed up by our Roast Master, Dumo Mathema.
SOURCING AND QUALITY
Our coffee scores 80 or higher out of 100 as graded by the Specialty Coffee Association (SCA).
Single origin coffee is a coffee that’s sourced from one single producer, crop, or region in one country. Single farm and single estate mean that the coffee is sourced from one farm, mill, or co-operative. The important thing about single origin is its traceability. You know exactly where the coffee is from and that it is a specific coffee, not a blend. A single origins flavour profile depicts the origins characteristics of where this coffee was grown.
Grading criteria may include bean size, bean hardness, growing altitude, colour, aroma and the number of bean imperfections of defects, purity of plant type, processing methods to extract the beans from the coffee cherry, moisture content and quality of the cup of brewed coffee produced by the coffee beans. Each coffee-growing region has its own method of grading.

Over 125 million people worldwide are employed in the coffee industry from baristas, right down to the many generations of farmers that pick and process our beans. It is our goal to support every part of that chain.
LOOKING AFTER OUR FARMERS
Looking after our farmers is extremely important to us. Although direct trade has its advantages, we only use carefully selected importers. We make sure that not only are the farmers’ rights protected, but the relationship built up over generations is preserved.
In an age of information, hospitality has been overhauled into an industry of ethics, sustainability and traceability. Any restaurant will be able to tell you where their beef or vegetables are from, even down to the cow or lot. Why should it be any different with coffee? We only use 100% traceable, grade 1 beans from micro lots.
Farming a micro lot gives the farmer more contact time with the crop. Quite simply - quality over quantity. Once the beans are delivered to our roastery we are equally as respectful to the beans making sure they are hand roasted the best we can roast them. Our roasting process incorporates all of the senses to make sure the beans are as unique as the farmers that supply us.
We train each and every one of our baristas to weigh our coffee to one-tenth of a gram out of the grinder and time each shot to the second to bring you a perfect serve.
